I have just found this site and am wondering: when you are reading tabs how do you know what time to play the music in?

Hi mummah, and welcome. No one has come up with a way to indicate the timing (or time signature) on a tab yet, other than approximation by the amount of space between the notes.
If you (or anyone else) has any suggestions, post them here...maybe your idea will become part of a new standard!

Just listen le song played by a great pianist before start to use the tab ?

See my post 'Ultimate Tab Lesson' with my additional comment at the bottom of it on the 'Tips & Techniques' forum. It explains how if a tab is set up properly, the timing is presumed by the # of increments in a measure (i.e.: 4, 8, 16, or 32 inc./meas. = 2/4, or 4/4 time; 6, 12, 24, or 48 inc./meas. = 3/4, or 6/8 time; and if the # of inc.'s in a meas. is evenly divisible by '7', it's probably 7/8 time.)
If the tab is set up properly, it will sound just like the original song (or close to it) when played on the MIDI at the bottom right corner of the tab viewing window.
